Gluten Free Mocha Muffins.

I decided to whip up a recipe using coffee, cocoa powder and coconut flour, so I came up with these MOCHA COCONUT MUFFINS! I am gluten free, 99% dairy free, I do use organic cheese and organic yogurt once in a while for my family but for the most part stay away from dairy myself. Muffins are a great breakfast item, but majority of store bought ones contain so much sugar, hydrogenated fats and gluten, no thanks! When I created any food for my kids I want to make sure that what they are eating will benefit their bodies and fill their cells with ingredients that will help them and do no harm. When making or even buying any foods, ingredients are what matter, not the label, not the pretty packing, not the price. INGREDIENTS will make ALL the difference in your health and health of your family. So, with that being said, heres what I used:


1/2 cup organic coconut flour-coconut flour is VERY dense so it does not equal to using regular flour or almond flour

4 eggs

1 tsp vanilla

1/3 cup honey or maple syrup

pinch salt

1/2 tsp baking soda

1/2 scoop Vega Vanilla Protein Powder (optional)- I used for flavor and added consistency

2 tbsp cocoa or cacao powder

1 tbsp chia seeds for added good fats and fiber

1-2 tbsp coconut oil-use one and add one more if you need a more runny consistency

1/3 cup brewed organic coffee


Pre Heat oven to 350 degrees

Blend all wet in a blender, add in all dry ingredients. If you mix is too dry add in another egg or another tsp of brewed coffee till you get the desired slightly but not too runny consistency.

Stir in the cranberries or dark chocolate chips and fill muffin pans to about 3/4 full

Bake for 20 minutes then fill with grass fed butter or Sunbutter!!
